Paleo Orange-Kissed Chocolate Chip Cookies

Yield: 20 cookies

INGREDIENTS

1. 1 cup almond flour (blanched)

2. 1/4 cup coconut flour

3. 1 scoop collagen peptides (optional)

4. 1 teaspoon of baking soda

5. a quarter teaspoon of fine sea salt

6. 8 tablespoons unsalted butter (4 ounces) at room temperature

7. a quarter cup of cashew butter

8. 3/4 cup coconut sugar, packed

9. 1 teaspoon of orange zest

10. 1 large egg, at room temperature

11. 1 teaspoon vanilla extract

12. 3 oz. dark chocolate, chopped (at least 70% cacao) (preferably a paleo-friendly brand, such as Hu Kitchen)

HOW DO YOU MAKE IT?

1. Combine both flours, collagen (if used), baking soda, and salt in a small mixing bowl.

2. In a large mixing bowl, whisk butter, cashew butter, coconut sugar, and zest until light and fluffy using an electric mixer. Scrape down the sides of the basin as you beat in the egg and vanilla. Stir in the almond-flour mixture, then fold in the chopped chocolate.

3. Refrigerate the dough for 1 hour after covering it.
Preheat the oven to 350°F and line a baking sheet with parchment paper.

4. Scoop dough into 10 to 12 balls, set on a baking sheet, and flatten into disks with your palms.

5. Bake for 10 to 13 minutes, until just cooked but still soft.

6. Allow at least 10 minutes to cool a sheet pan on a rack before serving.

7. Refrigerate leftovers for up to four days, covered (but they never last that long!).
